Rustic Potato Puree

As you probably observed I always use a lot of spices when I cook. I decided to change the classical recipe of potato puree and create my own version.

potato carrots puree

Ingredients:

6 peeled and diced potatoes
2 sliced carrots
3 tablespoons olive oil
1 teaspoon caraway seeds
3 gloves of garlic
1 teaspoon minced ginger
salt and black pepper
dried mint (optional — for decoration)

How it’s made

Step 1: Put the potatoes and the carrots in water and cook them until tender. When they are done throw away the water.
Step 2: In a hot pan add the oil, caraway seeds, garlic, ginger and salt. Cook for about 1-2 minutes.
Step 3: Using a fork pound the potatoes and the carrots mixing in the flavored oil.
Step 4: Spread dried mint powder on top and serve!
