I invented this recipe not only because I was hungry, but also because I have a cold. The chili, the black pepper and the oregano are key ingredients in this recipe to keep the flu away. Forget about the classical chicken soup and try something different. Peanuts are optional, but they give a crunchy feeling and they are healthy, too.
3 peeled and diced potatoes
1 chopped onion
3 garlic cloves
50 grams of mixed vegetables (carrots, bell peppers, tomatoes, earth apples [Helianthus tuberosus] etc. — you can use what you like)
2 cups of water
3 tablespoons sunflower oil
1/4 teaspoon chili powder
dried oregano and thyme
1 hand of unsalted peanuts (optional)
How It’s Made?
Step 1: Cook the onion and the garlic in sunflower oil. When softened, add the spices and the vegetables.
Step 2: Add the water and simmer until tender.
Step 3: Blender the ingredients and decorate with dried oregano, thyme and peanuts.
