Thanksgiving Vegetable Stew

Thanksgiving Day is a national holiday celebrated primarily in the United States. Being in Romania I don’t celebrate it, but I still wanted to come with an idea to inspire you. As I researched on the Internet, I discovered that the main ingredients used in this special day are turkey and potatoes. You can browse the archive to find a recipe that is proper for this day or/and try this vegetable stew. You can serve this stew as a garnish for roasted turkey (for example).

You don’t need to buy special ingredients for this recipe. You need a few vegetables, mix them together with a little water and tomato paste, then cook them in the oven for 20-30 minutes. Use whatever you like or have in your pantry. I used: onion, potato, broccoli, red bell pepper, carrot, peas, mushrooms, green beans and garlic. Experiment and let your imagination fly.
