Eggs in Purgatory

Eggs in Purgatory is a classic recipe that I’ve never tried it before. I’ve read about it; I’ve seen other persons trying it and sharing on their blogs about it. Because the pictures were so catchy I have decided to give it a try. It took me about 20 minutes, so I can say it’s a simple recipe and you have to try it too. You won’t regret it.

Eggs in Purgatory Recipe
2 eggs
1 tablespoon olive oil
1 medium size onion
3-4 cloves of garlic, cut in small pieces
4 medium size tomatoes, skin removed
1 small chili pepper, chopped

How It’s Made?
Step 1: Heat olive oil in a large skillet, add onions and cook until they become translucent.

Step 2: Add garlic and chili pepper and fry for another 2 minutes, stirring occasionally.
Step 3: Cut the tomatoes into medium pieces and add them to the skillet. Add salt and pepper.
Step 4: Cover and simmer for about 15 minutes.

Step 5: When the sauce is ready, make little depressions in the sauce with a spoon and break an egg into each of them.
Step 6: Cook for another few minutes until the eggs are ready.
