As you probably know, if you have read my first post, in the upcoming days I will post daily a recipe idea that can easily fit into a detox plan. This is the second day and my recommendation for today is this lentil and tomato salad.
Lentils are so great, because they provide needed protein that assists in liver detoxification. In addition, lentils are one of the easiest legumes to digest and have been shown to reduce belly fat. Lycopene, the red pigment that provides tomatoes with their bright color is a powerful antioxidant, providing a host of health benefits, including protection of the liver from free radical damage.
200 g dried green lentils, rinsed
1/2 yellow onion, chopped
5 cherry tomatoes
1 small garlic clove, crushed
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon fresh dill
salt and pepper to the taste
How It’s Made?
Step 1: Boil the lentils following the instructions on the package, drain and rinse well.
Step 2: Add the cooled lentils into a bowl, and then mix in the lemon juice, olive oil, garlic, onion, salt and pepper.
Step 3: Cut the cherry tomatoes in half and then toss them into the bowl.
Step 4: Garnish with fresh dill and serve immediately.
